BarOLO vigna castelleroThis wine comes from the Castellero vineyard, which comprises 15 acres with a South-West exposure, in the borough of Barolo. The Nebbiolo grape of the Michet variety is cultivated using the low guyot system with a planting layout of 5.000 vines per acre. Average production: 40 quintals of grapes per acre. Manual grape-picking with careful selection of the bunches, in the second half of October. Fermentation in 50 hectolitre oak vats for a period of 15-20 days with frequent immersing of the skins. It is matured in oak casts of medium capacity (15-30 hectolitres) for about 3 years.

Color: Garnet-red, with orange reflections.
Aroma: Ethereal, pleasant and intense, reminiscent of withered roses and of violets.
Taste: Dry, full-bodied and solid, austere, but velvety and aromatic.
Serve with: Red roasts, braised meat, game, cheese and bourguignon.
Wine Tasting: It is preferable to taste it using a wide glasses which foster oxygenation and enhance wine bouquet. We suggest you serve it at a temperature of 64 oF. In case of very old vintages it is better to decant the wine in carafes.
Preservation: Wine bottles should be stored lying horizontally in rooms at a constant temperature, if possible. Keep away from light sources. We suggest you keep the wine in its original box.
